Atomic Cafe Coffee Roasters Newsletter Number 3
After a long wait, we've finally put
together a new newsletter. Obviously, keeping the webstore up-to-date
should be a top priority, but the final stages of moving roasting
operations to our new warehouse space and the addition of a new family
member for our head roaster/webmaster (it's a boy!) has meant even some
top priorities got rather neglected. Our apologies. But let's get to the
info you're reading for:
New Roasterie

For about five years now we've been an in-store roasterie with a small,
7-kilo roaster in the side room of our Beverly, MA cafe. While still a
small operation, we have grown to the point that keeping up with
production on that little machine got pretty difficult! At last, we've
moved all of our roasting operations to our Salem, MA warehouse space
where we are roasting on a 24-kilo roaster, pictured above with yours
truly. The wide-angle lens used for the photo makes the roaster appear
pretty small but it's actually a huge step up in capacity (I'm sure I'll
eventually get less distorted photos on our website or in a future
newsletter) and the transition from the small machine has gone quite
well. Duplicating our old roast profiles only proved a challenge at
small batches, but I've worked those out too and find that the quality
of our roasts is every bit as excellent as they ever were - thanks go
out to the roaster manufacturer
Diedrich for making machinery so remarkably consistent even
between dramatically different sizes (we also use a small one-lb machine
for sample roasting which you can see in the right side of the above
photo).
New Coffees
The Ethiopia Yirgacheffe
Koke we have been enjoying for a few weeks now. It is so
impressively floral and elegant at times it's akin to drinking a sweet
herbal tea. This is one of our head roaster's personal favorites.
The Mwurire (yes, we
struggle to pronounce that as well!) is the first coffee we've ever
sourced from Burundi and it's an excellent one that we've just started
serving in our Beverly, MA cafe. Crisp and complex but very
approachable.
Costa Rica Rio Negro is
brought to you by the same brokers that manage and farm the famous La Minita coffee but,
while also exactingly produced, this coffee is very different. Dry cocoa
and herbaceous tones round out an otherwise bright coffee.
More New Coffees coming soon ...
We also just brought in three more coffees (a lot of new coffees all at once, I know!) but we have yet to dial in their roast profiles. Once we do I'll update the store and send out another short newsletter to announce them. Two are very fruity, dry-processed, exotic coffees. The one is an Ethiopia Sidamo and the other is a Uganda. And the third coffee is a citrusy, sweet Rwanda. Stay posted!
